Cheese-Stuffed Crust Mini Pizzas

Ingredients:
• 2 1/2 cups (300 g) all-purpose flour
• 1/4 cup (60 ml) milk
• 1/4 cup (60 ml) water
• 1/4 cup (60 ml) oil
• 2 tbsp (25 g) granulated sugar
• 1 egg
• 2 1/4 tsp (7 g) dry yeast
• 1/2 tsp (2.5 g) salt
• 1 egg (for egg wash)
• Pizza sauce
• Shredded pizza cheese mix (mozzarella, cheddar, etc.)
• Cherry tomatoes, sliced

Instructions:
1. In a large bowl, mix the flour and salt.
2. In a separate bowl, warm the milk and water until lukewarm. Stir in the sugar and yeast. Let sit for 10 minutes until foamy.
3. Add the milk mixture, egg, and oil to the flour mixture.
4. Using a stand mixer fitted with a dough hook, knead the dough for 7–8 minutes until smooth and elastic.
5. Transfer the dough to a lightly oiled bowl. Cover and let rise in a warm place for 1–2 hours, or until doubled in size.
6. Punch down the dough and divide it into 4 equal parts. Shape each into a ball.
7. Cover and let rise again for 30 minutes.
8. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
9. Roll out each dough ball into a small round pizza base.
10. Brush the outer edge with egg wash.
11. Leave a small space from the edge and sprinkle a ring of shredded cheese around the border.
12. Fold the edge over the cheese and press to seal, forming a filled cheese crust.
13. Transfer the mini pizzas to the prepared baking sheet.
14. Spread pizza sauce over the center of each pizza, avoiding the crust.
15. Top with shredded cheese mix and sliced cherry tomatoes.
16. Bake for 15–20 minutes, or until the crust is golden and the cheese is melted and bubbly.
17. Serve hot.
