Since I started to publish my korean food recipe I have been asked many times: Neta, can you share your recipe for Jjajangmyeon? the korean-chinese black bean noodles?
Well, it took me some time to find a way to make the kosher version of this dish but I can finally say I have the best recipe for this!
You dont need the korean chunjang to make this dish, because I'm going to show you how to make this from SCRATCH! yayyyy

This recipe have two parts: first is for the paste, and second is for the whole dish.

PART 1 :
Black paste ingredients: (good for 2 serving)
water
1 tbsp sugar
1/2 tbsp flour
pinch of salt
1/2 tsp soy sauce
1/2 tsp molasses
1 tbsp dark miso paste
food coloring

In a small pot, melt sugar with 1/8 cup water on low heat until you get a dark caramel. when its dark and smoky add another 1/8 cup of water, take it of the stove and let it cool down.

In a small bowl add 1/8 cup water with slat and flour, mix well and add the soy sauce, molasses and miso. mis it all and when the caramel water are not hot add it too.

In a small non-stick pan add this mixture and cook it on low heat while stirring well untiil it's got thickened. Put it back in the bowl and stir it until its cooling down a bit.

Now you have the paste, you can use it as it is and get the same dish in a light brown caramel color. But if you want it black as it's in koreea so add food coloring. 2 drops of extra black with 1 drop of chesnut brown are enough for getting the color we want. If you have caramel food coloring just use it, it's the best option.

You can double the amount of the ingredients and save it your fridge and use it whenever you want. It will last for months.
And the flavor ill gwt better and better.

The second part of the recipe: MAKING THE FOOD!
The ingredients for 2 serving of the sauce:
2 shiitake mushrooms soaked in half a cup of water for one hour. then chopp the mushrooms, and save the water for the cooking.
1 tbsp soy chunks soaked in water for half an hour
1 garlic glove, chopped
1 green onion, chopped
2 fresh mushrooms, roughly chopped
1 medium-small yellow onion, cutted to big pieces
half a carrot, chopped
half a cucumber for garnich
3-4 tbsp cooking oil
1 tsp sugar
water
starch water (1/2 tbsp corn starch mixes with 1 tbsp water)

noodles (you can use udon noodles, fresh or dried, egg moodles, and even spaghetti)

In a heavy pan add oil, garlic and green inion. stir fry got 30 seconds, then add the soy chunks, shiitake mushrooms and carrot and fry for another 30 seconds.
Add the frsh mushroom, fry for 1 minutes, then lastly add the onion and stir fry all together for 2 minutes.
Add the black sauce and stir fry for 30 seconds, then add the shiitake mushrooms water and mix well to not have any lumps.
Add another 1/4 cup water and cook it for 7-10 minutes on medium high heat.
When it's almost done, add the starch water ad mix well. Turn off the stove.

Cook the noodles acording to the packaging. when it's done, strain and rince well.
Place in a plate, then pour half of the sauce on it, add cucumber and it's done!

Mix well, and enjoy :)
