This Quick Bread has a layer of fresh apples, brown sugar and cinnamon in the middle! The bread itself is very moist and topped off with even more apples and brown sugar!!


Ingredients:
1 1/2 cups ap flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 cup white sugar
1/3 cup dark brown sugar
1/2 cup milk (room temp)
1 stick unslated butter (room temp)
2 lg eggs (room temp)
1 1/2 tsp pure vanilla
2 medium apples (cortland, honeycrisp or macintoshare great.)

Grease an 8×4 in. loaf pan with butter. Preheat oven to 350 degrees.

Peel and chop apples into bite sized pieces. Set aside.
Combine brown sugar and cinnamon in a small bowl. Set aside with the apples.

Add sugar and butter into a large bowl. Mix with a mixer until creamy and light. Add in eggs, milk, and vanilla. Cream on high until mixed thoroughly. Scrape down bowl.
Sift in flour, baking powder, and salt. Fold in with a spatula until there are no more streaks of flour.

Layering The Bread:
Spread 1/2 of the batter onto the bottom of your loaf pan.
Sprinkle half of the apples over the batter, and also add half of the brown sugar/cinnamon mixture over the apples.
Using up the rest of the batter place dollops of it over the apples and sugar layer. Smooth it out evenly sealing the corners.
Layer the last of the apples and brown sugar/cinnamon mixture over the top.
Bake at 350 degrees for 50-55 minutes.

Make the Glaze!
1/2 cup powdered sugar
2 TBSP heavy cream (or more if you want the glaze thinner.)
Whisk sugar and cream together til smooth.

Allow the loaf to cool for 10 minutes then pop it out. Loosen the sides with a knife if it is being stubborn 😊 Cool completely then drizzle glaze over.
Wrap plastic wrap tightly over loaf to store or cut into pieces and store in an airtight container. Will be good for up to 5 days. Enjoy!!
