On this week's Taste of Retirement, we're taking a classic Italian pasta dish, shrimp fra diavolo, and putting our twist on it by making it a chicken fra diavolo pasta! Now, if you've never had a fra diavolo sauce or fra diavolo pasta sauce before, it can be a bit spicy! Of course, it depends on who makes it and how spicy they want to make it, but with ours we went with a more milder version of fra diavolo. Now, we used fresno chili peppers for ours, which clock in around 2500 to 10,000 scoville units which is pretty mild on the scoville scale which tops out over 2 million scoville units with the carolina reaper pepper. So, how how to make chicken fra diavolo pasta? Well we start with breading and frying our chicken breast and dropping some pasta into the pot. Then it's time for the magic, the Fra diavolo pasta recipe:

Canola Oil
Medium Diced Onion
Diced Fresno Chili Peppers
Diced Fire Roasted Red Peppers
4-6 Cloves Diced Garlic
2 tbsp Dried Oregano
1 tbsp Dried Basil
1-2 tbsp Crushed Red Pepper Flakes
1-2 cups white wine
Salt & Pepper to Taste
28oz San Marzano Tomatoes
Pasta of choice
Parmesan & Parsley for garnish


Breaded chicken recipe:
flour
eggs
italian bread crumbs
salt & pepper
chicken breast
canola oil

For the fra diavolo sauce, you want to start by sweating the onions before adding in the diced fresno and fire roasted red peppers. After the onions are translucent, you'll toss in the garlic for around 30ish seconds or until fragrant, then deglaze with the white wine. After the wine is pretty reduced, you'll add in the tomatoes and seasoning and then reduce a bit more. Finally, you just need to drop the pasta in the sauce and coat it, then top it with the chicken breast and you're on your way to a delicious and easy dinner recipe you're sure to love!
