20-25 peanuts (groundnuts) 🥜

1/2 tsp salt 🧂
2 tsp Kashmiri red chili powder 🌶️
1/2 tsp turmeric powder 🌼
1 tsp cumin seeds (jeera) 🌱
1-2 green chilies (optional) 🌶️
2-3 tbsp oil for cooking 🛢️
Fresh coriander for garnish 🌿
Lemon juice (optional) 🍋
📜 Detailed Method:
1. *Prepare the Vegetables*: Peel the potato and cut it into medium-sized pieces. Wash the brinjals and cut them into large pieces.
2. *Make the Spice Mix*: In a mixer jar, blend garlic, peanuts, grated coconut, salt, red chili powder, and turmeric powder to create a smooth paste.
3. *Cook the Spices*: In a pan, heat oil and add cumin seeds. Once they splutter, add the prepared spice mix and sauté for a few minutes.
4. *Add Vegetables*: Add the large pieces of brinjals and potato to the pan. Mix well to coat the vegetables with the spice mix.
5. *Cook Together*: Transfer the mixture to a pressure cooker, cover, and cook on low flame for 2 whistles. Allow the pressure to release naturally.
