✫ Almond Croissant ✫

► Ingredients:
Vegan croissant dough (6)
100g Vegan butter
20g Cornstarch
140g + 30g Icing sugar
100g Almond flour
1/8 tsp Salt
1/2 tsp Almond extract
10g Brown rum (optional)
50g Applesauce
100ml Water
1 tsp Vanilla extract
Almonds

Croissants:
There is vegan croissant dough in several supermarkets.
Follow the package directions and in less than 15 minutes you will have fresh vegan croissants.
This recipe works great with day old croissants!

Vegan Frangipane Cream/ Almond cream:
➊ In a bowl add the vegan butter, cornstarch, 140g icing sugar and almond flour, mix until homogenous.
➋ Add the applesauce, salt, almond extract and optional brown rum, mix until well combined.

Vanilla Syrup:
➊ In a bowl add the water, 30g icing sugar and vanilla extract. Mix until the sugar is dissolved.

STEPS:
➊ Brush the croissants before you bake with non-dairy milk for a golden brown color.
➋ Once cold cut the croissant lengthwise straight and dip the bottom part in to the syrup.
➌ Spread the almond cream on top.
➍ Place the top part of the croissant and then top with some more almond cream.
➎ Cover this cream with almonds and a generous amount of icing sugar.
➏ Bake for 5-7 min.
