Brinjals Curry
Make brinjal curry this way you will ask for more and more rice its so yummy
Brinjals: 200gm (2 medium size)
Tamarind : a small goose berry size
Hot Water : 2.5cup
Coconut Oil : 3tbsp
Fenugreek seeds : 1/2tsp
Mustard seeds : 1 tsp
Dried red chilli: 2
Curryleaves
Hing : 1/2tsp
Salt to taste
Chilli powder : 1/2tbsp
Coriander powder: 1tbsp
Turmeric powder: 1/2 tsp
Jaggery: a small piece
Firstly soak tamarind in 2 cup hot water and extract the juice from it..Keep it aside..
Now in to a pan add coconut oil and add fenugreek seeds and mustard seeds after they stops spluttering add dried red chilli curry leaves and hing..
Now add Brinjal and enough salt and saute well.. to this add chilli powder coriander powder and tu and mix well now add the tamarind juice and 1/2 cup hot water and cook on medium falme for 5 minutes or until gravy becimes thick and oil seperates now add a small piece of jagger to balance the heat from chilli and sourness if tamarind..
Mix well ur tasty curry is served..
