INGREDIENTS:
For Dal:
Chana Dal (चना दाल) - 1 bowl
Water (पानी)
Salt (नमक)
Turmeric Powder (हल्दी पाउडर)

For Tadka:
Oil (तेल) - 2 tbsp
Cumin Seeds (जीरा) - 1/2 tsp
Asafoetida (हींग)
Ginger (अदरक)
Green Chili (हरी मिर्च)
Curry Leaves (कढ़ी पत्ता)
Salt (नमक)
Black Salt (काला नमक)
Roasted Cumin Powder (भुना जीरा पाउडर) - 1 spoon
Garam Masala Powder (गरम मसाला) - 1/2 spoon
Coriander Powder (धनिया पाउडर) - 1 spoon
Mango Powder (अमचूर पाउडर) - 1 tsp
Turmeric Powder (हल्दी पाउडर)
Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर)
Coriander Leaves (हरा धनिया) - for garnishing

For Pakwan:
All Purpose Flour (मैदा) - 1 cup
Salt (नमक)
Carom Seeds (अजवाईन) - 1/2 tsp
Oil (तेल) - 2 tbsp in dough
Water (पानी) - for binding
Oil (तेल) - for frying

For Aloo Tuk:
Potato (आलू)
Oil (तेल) - for frying
Salt (नमक)
Turmeric Powder (हल्दी पाउडर)
Coriander Powder (धनिया पाउडर)
Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर)
Mango Powder (अमचूर पाउडर)
Chili Flakes (कुटी हुई लाल मिर्च)

RECIPE:
For Dal, take some Chana Dal & soak it for 2 hours. Take a cooker, put Chana Dal, Water, Salt, Turmeric Powder then boil it. The froth comes above, take it out & give it 2 whistles then cook it for 5 mins on slow flame.
For Tadka, take a pan, put Oil, Cumin Seeds, Asafoetida, grated Ginger, chopped Green Chilies, Curry Leaves & mix some Spices like Salt, Black Salt, Roasted Cumin Powder, Garam Masala, Coriander Powder, Mango Powder, Kashmiri Red Chili Powder, Turmeric Powder & put them in pan, put some Water & boiled Dal. Mash some Dal & garnish it with Coriander Leaves, Sweet Chutney, Green Chutney, Onion, Tomatoes.
For Pakwan, take some All purpose Flour, sieve it & put Salt, Carom Seeds, some Oil & bind the dough by adding Water. Keep the dough for rest for 15-20 mins. Make dough balls, roll them & prick them with fork or knife then fry the Pakwans on medium flame till they turn golden.
For Aloo Tuk, chop the Potatoes as shown in video. Fry them in medium heated Oil. Then press the fried Potatoes slightly & fry them again. Take some Salt, Turmeric Powder, Coriander Powder, Kashmiri Red Chili Powder, Mango Powder, Chili Flakes & mix them all. In a pan put some Oil, put fried Potatoes, Masalas & mix them.
