坊間常常會聽到、看到飽和脂肪酸和不飽和脂肪酸出現,
飽和脂肪酸容易危及到人體健康,
而不飽和脂肪酸相對來說更加的健康等等的論述也所在多有,
那麼究竟何謂飽和脂肪酸?不飽和脂肪酸?
這邊先從脂肪酸開始介紹:
脂肪酸是一種含有一條很長的碳氫鏈合一個末端酸鹽基的化合物,
在生物系當中的脂肪酸通常含有偶數個碳原子,
典型的是在14到24之間,其中以16碳和18碳是最為常見的。
而在動物體內的脂肪酸,
它的碳氫鏈基本上都是不具分支的,
其中若是飽和狀態就稱之為飽和脂肪酸。
當然也可能含有一個或一個以上的雙鏈,
其中含有一個雙鏈稱之為單元不飽和脂肪酸,
含有一個以上雙鏈稱之為多元不飽和脂肪酸。
所以通稱的飽和脂肪酸和不飽和脂肪酸,
其實不飽和脂肪酸還分成單元和多元。

在我們日常生活中攝取的大部分肉類,
例如像豬、牛、羊等都含有較多的飽和脂肪酸。
而植物油則普遍含有較多的不飽和脂肪酸,
另外我們時常額外補充的魚油,
則是含有非常高量的多元不飽和脂肪酸(如DHA、EPA)。
