GYRO PLATTER WRITTEN RECIPE :

Ingredients for Rice :
Soaked rice 250 gm
Oil ¼ cup
Chopped onion ½ cup
Turmeric ¼ tsp
Cardamom a pinch
Chicken stock 1 ½ cup
Salt 1 tsp

RICE METHOD:
Heat oil, sauté onion, spices, and stock, and add soaked rice, when water dries, put on dum.

Ingredients for Yogurt Sauce :
Yogurt 1 cup
Mayonnaise 3 tbsp
Cumin ½ tsp
Black pepper ¼ tsp
Salt ¼ tsp
Vinegar 1 tbsp
Lemon juice 1 tsp

METHOD FOR YOGURT SAUCE :
Mix all together in a bowl; cover and refrigerate until ready to use.

Ingredients for Beef or Chicken :
Undercut julienne or Chicken julienne 500 gm
Oregano 1 tsp
Paprika 1 tsp
Crushed cumin 1 tsp
Mayonnaise 1 tbsp
Garlic paste 2 tsp
Black pepper 1 tsp
Oil ¼ cup

METHOD :
Marinate beef or chicken, and grill in a fry pan until done.

Ingredients for Spicy Red Sauce :
Onion chopped ½ cup
Red chilies chopped 2
Garlic crushed 1 tbsp
Lemon juice 2 tbsp
Sun-dried tomato puree 2 tbsp
Sugar 1 tbsp
Chopped tomatoes 1 tbsp
Oil ¼ cup
Salt 1 tsp

METHOD FOR SPICY RED SAUCE :
Heat oil, sauté onion and garlic add remaining ingredients, cook for a while, and blend into a paste.

Ingredients to Assemble and Serve :
Take a platter, spread rice on the platter, put sliced chicken or undercut on one side, 1 ½ cups of coarsely chopped icebergs, some chopped tomatoes, put pita slices on one side, drizzle with prepared white sauce and then red sauce on the top, serve with fries.

CHATKHARA KARAHI WRITTEN RECIPE :
Ingredients for grinding:
Green cardamom seeds ½ tsp
Coriander seeds roasted 2 tbsp
White cumin seeds roasted 1 tbsp
Black pepper whole 1 tbsp
Chat masala 1 tsp

Ingredients for cooking:
Chicken (16 pcs) 1 kg
Ginger garlic paste 2 tbsp
Oil ½ cup
Clarified butter ½ cup
Yogurt 1 cup
Chopped thin green chilies ¼ cup
Crushed red pepper 1 tbsp
Salt 1 ½ tsp
Ginger julienne 2 tbsp
Lemon juice ¼ cup

METHOD :
Prepare karahi mix and keep aside. Heat oil in a wok and fry chicken pieces till golden, add beaten yogurt and fry till yogurt water dries, add ghee, and as soon as the ghee gets bubbling hot, add the karahi mixture of about 2 tbsp heaped, chili flakes, green chili, salt, fry the spices till green chilies and chili flakes are done, serve hot with a sprinkle of chat masala, lemon juice, and ginger julienne.
