Veg Donne Biryani

Ingredients

Jackfruit 3 cups
Water as required
Salt ½ tsp
Turmeric powder ½ tsp
Ginger-garlic-green paste 1 tsp

Green Paste For Biryani:
Mint leaves ½ cup
Green chillies 3 pcs
Coriander leaves a handful
Water as required

Biryani masala:
Black Pepper 1 tbsp
Green cardamom 8-10 pcs
Mace 2 pcs
Nutmeg ½ pc
Cinnamon 2 inches
Black cardamom 3 pcs
Saunf 1 tbsp
Cloves 12-15 pcs
Star anise 2 pcs
Stone Flower / dagad phool 2 tbsp
Shahi jeera 1 tsp
Bayleaf 4-5 pcs
Coriander seeds 3 tbsp

For Biryani masala:
Oil ¼ cup
Bayleaf 2 pcs
Cinnamon 1 inch
Black cardamom 2 pcs
Cloves 4-5 pcs
Star anise 2 pcs
Black pepper 6-7 pcs
Green cardamom 4-5 pcs
Onion sliced 1½ cup
Ginger-garlic-green paste 1 tbsp
Salt 1 tbsp
Turmeric powder 1 tsp
Jackfruit boiled
Biryani masala 2 tbsp
Water as required
Seeraga samba rice (soaked) 1 cup
Lemon juice 1 tbsp
Ghee 1 tbsp

Method:

1. Prepare Biryani Masala:
- Toast a mixture of spices in a pan until fragrant. This includes black pepper, green cardamom, mace, nutmeg, black cardamom, cinnamon, bay leaf, stone flower, shahi jeera, cloves, and coriander seeds.
- Once toasted, allow the spices to cool before grinding them into a fine powder. Store this masala in an airtight container for later use.

2. Make Biryani Paste:
- Blend together fresh mint leaves, green chilies, and coriander leaves with water until a smooth paste forms. Set aside for later use.

3. Prepare Jackfruit:
- Remove the skin and core of the jackfruit, then cut it into small pieces.
- Boil the jackfruit in water seasoned with salt, turmeric powder, and ginger-garlic-green chilli paste until tender. Reserve the cooking water.

4. Cook the Biryani:
- Soak seeraga samba rice for at least an hour.
- Heat oil in a pan and temper it with bay leaf, cinnamon, black pepper, green cardamom, black cardamom, and star anise.
- Sauté sliced onions until translucent, then add ginger-garlic-green chilli paste and the prepared pulao paste. Cook briefly.
- Season with salt and turmeric powder, then add the boiled jackfruit along with its cooking water.
- Mix in the prepared biryani masala, cover the pan with a lid and cook it for 3-4 mins.
Then remove the jackfruit pieces to a plate and keep aside.
- Add soaked rice and water to the gravy pan. Adjust water levels as needed for the rice to cook properly. (twice of soaked rice)
- Lastly add lemon juice, ghee and cook further.

5. Simmer and Serve:
- Simmer the pulao until the rice is cooked through and tender.
- Allow the pulao to rest for a few minutes off the heat to allow the flavours to meld.
- Serve the Biryani hot, plated with generous portions of the jackfruit pieces cooked in the flavorful gravy.
