Vegan Ghapama Armenian Recipe | Pumpkin Stuffed With Rice, Nuts and Dried Fruit | With the holidays around you will want to make this dish it will be a hit!

This recipe is VERY customizable! That being side I cant give you exact measurements because it will depend on the size of your pumpkin. I will give you the measurements I used for my pumpkin to give you a idea but if you have a bigger pumpkin all you will need to do is make more rice and add more nuts or seeds as well as dried fruits.

Ingredients :
Remember this is for a small size pumpkin!
1 Pumpkin any size you like!
2 cups Cooked medium grain rice ( brand carlrose and if you have a bigger pumpkin you will need more cooked rice )
1/4 maple syrup ( if you want it more sweet add more taste as you go also you can use any sweetener you like )
1/2 tsp cinnamon
6 pitted dates chopped
1/2 dried apricots chopped
1/2 slivered almonds
2 tbsp coconut oil ( you can also use vegan butter its up to you and like I said you can also make it oil free )


Step 1. Preheat the oven for 350 then wash your pumpkin before cutting it then dry it . Next cut the top cutting on a angle NOT straight up and down. Then clean out the seeds also carving out the extra string inside best as you can.

Step: 2 cook the rice as you normally would also add 1 tbsp of coconut oil Next like I said in the video cook the rice half way till the water is gone but the rice is still wet. Once the rice is ready fluff the rice with a fork next take 2 cups of rice and put it in a mixing bowl then next step is easy! While your rice is cooking this is a good time to toast your nuts or seeds just don’t burn them!!!

Step:3 add the maple, cinnamon , nuts and or seeds, dried fruit to the bowl of rice and mix it all up

Step:4 take 1/2 tbsp of coconut oil and 1 tbsp of maple syrup and brush the inside of the pumpkin with that mixture then stuff the pumpkin with the rice mixture all the way to the top leaving room for the lid . Next you will need 1/2 tbsp of coconut oil put the lid on and brush the outside of the pumpkin with some coconut oil then line a baking sheet with parchment paper put the pumpkin in the oven for 1 1/2 hours check it mine took 1 and 45 minutes ( also cooking time is going to be different for you depending on the size of your pumpkin ) you will know its ready if it feels soft tender all around when you take it out be Very Careful!!!! it can fall over take it out slowly!!!

Step:5 Cut it and enjoy!!!!
