LESS SWEET, SMOOTH AND CREAMY KAYA

Ingredients
500g Coconut Milk (press from 2 coconut)
620g or 12 nos of Whole Egg
250g Brown sugar

Steps:
1.) Press 500g coconut milk from two shredded coconut or you can just get the instant coconut cream from market.
2.) Melt 150g brown sugar in a wok using low heat, just melt it no need cook it become caramel.
3.) At the same time mix the remaining 100g sugar with eggs and mix well, filter it and set aside
4) When the sugar in the wok almost melted, pour in coconut milk batch by batch and bring it boil and cook until a bit thicken.
5.) Turn off the heat and let the sugar mixture cool down.
6.) After that pour in the eggs mixture, filter one more time
7.) Add few pandan leaf to make the Kaya more fragrant
8.) Then turn on the heat, using low heat stir fry the mixture until thicken and the Kaya is formed.

Tips of cooking:
Must use low heat and keep stirring to form a smooth and creamy Kaya
