The yacón (Smallanthus sonchifolius) is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots. Yacón is a perennial herb which grows up to 2.5 meters in height. Underground tubers consist of branching rhizomes and up to 20 tuberous storage roots. . The Yacon root is used raw in fruit salads or the root can be powdered or converted to syrup. Yacon Syrup and Powder are then used as a sugar alternative to sweeten food.
