This recipe is roughly for 4 people.
For the MARINADE:
750g chicken (with bones, you’ll probably only need about 500g boneless)
2 tbsp natural yoghurt
1 tsp paprika
1 tsp turmeric
2 tsp garam masala
2 tsp coriander powder
1-2 tsp salt
1/2 onion (blended)
3 cloves garlic (blended)
1 tsp blended ginger

You’ll also need about 30g fried onions for cooking the chicken


For the RICE:
300g rice
2-3 green cardamoms
1 stick cinnamon
1 bay leaf


For the LAYERS:
30g fried onions
1 bunch fresh coriander, chopped
1 pinch saffron
1.5 tbsp milk, warmed



The ratios for a proper Bengali GARAM MASALA are:
6 cardamoms
1 inch of a cinnamon stick
4 cloves

Cinnamon
Chilli/Paprika
Pach Phoron (fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed)
