Preserving your bounty of cherry tomatoes has never been easier with this authentic Italian method from the Southern region of Calabria where my family is from. A few minutes of prep time will give you delicious, savory, tomato preserves ready to enjoy on bruschetta, crostini, or added to soups and pasta.

6 cups cherry tomatoes sliced in half
1 tsp salt
pepper to taste
thyme or rosemary

Lay the cherry tomatoes in a single layer on a baking sheet lined with parchment. Sprinkle with salt, pepper and thyme.
Bake at 250 degrees for about three hours checking to make sure they are not getting charred, just nicely browned and roasted
Remove from heat and and cool
When cool, spoon into a clean mason jar and cover with olive oil until tomatoes are submerged.
Will keep in the refrigerator for 3-4 months. Cover the remaining tomatoes with more oil as you use them so they are always submerged
