Torturing John with another edition of "drink stout in summer". This week, we taste Mike's house stout recipe but brewed up with West Yorkshire Ale yeast.

If you follow the channel, you know we've been playing over the last year an a half with comparing English Ale yeasts in a simple Brown Ale recipe. This ongoing comparison is where Mike discovered the West Yorkshire strain from Wyeast.

Mike vowed to go back and brew some if his classic English ale styles with this yeast to see how they come out. This stout is one of those attempts and it delivers.

This stout is not big on any certain stout-y quality. It's intent is to create a relaxed simple beer that you would recognize as stout but not be overwhelmed by any one component. It's meant to be a sessionable drinking stout even in the heat of the summer.

5# Briess Pale Ale Malt 3.5L
5# Briess Brewers Malt 1.8L
0.5# Roasted Barley 450L
0.5# Crisp Chocolate Malt 400L
0.25# Medium Crystal Bairds 50/60L
0.25# Briess C120L
1.5# Flaked Oats

1oz Willamette 60min
West Yorkshire Yeast.

6.5 gallon post boil
152F Mash Temp
65F fermentation Temp
