Bajan Bittle - A Culinary Excursion

CONKIES

Prepare banana leaves by making them pliable over an open flame. Wash, wipe dry and set aside.

Ingredients
1 lb Corn Flour
2 lb Grated pumpkin
1 1/2 cups Water
3 Tbsp Vanilla Essence
1/2 cup Raisins (Optional)
1 1/4 cups Sugar 1 Grated Coconut
5 oz. Butter / Margarine
1 tsp Ground Spice


In a large bowl, combine dry ingredients, add coconut, pumpkin, butter and raisins. Add water and vanilla essence, mixing until moist. Line the pot with some of the prepared banana leaves, keeping some to cover the top.

Take a sheet of banana leaf and place a serving spoonful of filling onto it. Fold the top and bottom together fold the ends to seal and fold the top to secure the package in place in pot or basket. Repeat until all mixture is used. Place extra sheets of leaves on top of conkies, put the lid on the pot. Cook for 25-35 minutes until done. Serve warm or cold
