Palak pappu/Spinach Dal is a delicious South Indian dish made with lentils (usually toor dal) and spinach (palak). It’s typically flavored with spices and often served with rice or roti.

Ingredients:

• 1 cup toor dal (split pigeon peas)
• 1/4 cup Masoor dal(red lentil)
• 2 cups chopped spinach (palak)
• 1 small onion, finely chopped
• 2 medium tomato,finely chopped
• 1/2 teaspoon turmeric powder
• 1 teaspoon red chilli powder
• salt to taste
• 1 tablespoon oil
• 2-3 green chilies
For tempering
• 1/2 teaspoon mustard seeds
• 1 teaspoon cumin seeds
• 2 cloves garlic,roughly chopped
• 1 tablespoon ghee
• 2 dried red chili
• curry leaves
• asafetida/hing pinch

Instructions:

1. Wash the toor dal & Masoor dal thoroughly and soak it for 30 minutes.
2. Chop onion,green chillies, tomatoes and keep aside.
4. Start the instant pot in SAUTE mode and heat oil in it. Add the soaked Toor Dal . Sauté It for a minute
5. Add onion, tomato, green chili sauté for another minute.
6. Add spices,water, spinach mix it well.
7. Press CANCEL and close the instant pot lid .Press Pressure Cook mode for 10minutes and START.After the instant pot beeps, let the pressure release naturally .Open the lid.
8. Again start the SAUTÉ mode add Tamarind water mash well.
9. Add salt (if required)and adjust the consistency by adding water if needed.
10. Let the palak pappu simmer for a few minutes, allowing the flavors to meld together. Press CANCEL.
11. Heat ghee and oil over medium heat in a frying pan. Add mustard seeds and cumin seeds. Let them crackle. Add garlic cloves, curry leaves ,dry red chillies and hing to the pan. Fry until the garlic turns golden brown.
12. Pour the tempering into the cooked dal and mix well.
13. Serve hot with steamed rice or roti. You can also garnish with a drizzle of ghee for extra flavor.
