Bar-be Jerk Chicken with Green Banana Salad and Dumpling Infusion

Ingredients:
- 4 lbs leg and thigh quarter chicken
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp ginger powder
- 1 tbsp paprika
- Salt, to taste
- Jerk seasoning, to taste
- Barbecue sauce

Green Banana Salad:
- Green bananas
- Salt, to taste
- Frozen vegetables
- Mayonnaise

Dumpling Infusion:
- 1 cup white flour
- 1 cup almond flour
1/2 cup cornmeal
1/2 cup coconut flakes
1/2 teaspoon salt
1/2 cup coconut milk

Instructions:

1. Preheat Oven:
- Preheat the oven to 350 degrees Fahrenheit.

2. Prepare Chicken:
- Rinse the chicken pieces with cold water and vinegar and pat dry with paper towels.
- In a small bowl, mix together onion powder, garlic powder, ginger powder, paprika, and salt. . - Add jerk seasoning to the chicken according to taste preference.
- Rub the seasoning mixture evenly over the chicken pieces.

3. Bake Chicken:
- Place the seasoned chicken in a greased baking dish/roasting pan with a lid.
- Bake in the preheated oven for 1 hour with the lid on.
- After 1 hour, remove the lid and bake for an additional 20 minutes.

4. Add Barbecue Sauce:
- Remove the chicken quarters from the oven and roasting pan then place them into a new container and generously brush barbecue sauce over each piece.
- Return the chicken quarters to the oven and bake for a final 25 to 30 minutes, or until they are cooked through and nicely glazed.

5. Prepare Green Banana Salad:
- Peel the green bananas and cut them into bitesize pieces.
- Place the slices in a pot of boiling water and salt, and cook until tender.
- Drain the bananas and transfer them to a bowl.
- Add the cooked frozen vegetables and mayonnaise.
- Mix all the ingredients together
- Optionally, sprinkle chopped cilantro over the salad for added flavor.

6. Prepare Dumpling Infusion:
- In a bowl combine White flour, Almond flour, Cornmeal, Coconut flakes, salt, and Coconut Milk to form the dough.
- Add the dumplings to the pot of boiling water with the bananas and cook until they float to the surface.
- Drain the dumplings and serve alongside the chicken and green banana salad.

7. Serve:
- Arrange the Barbe jerk chicken on a serving platter.
- Serve hot with green banana salad and dumpling infusion on the side.
