Ingredients for Buff Vada for Navratri
उबले आलू - Boiled Potato - 6 no, (1/2 kg)
सेंधा नमक - Rock Salt - 1 tsp
काली मिर्च - Black Pepper - 1/2 tsp, crushed
अरारोट - Ararot - 100 grams + 3 tsp
Stuffing
मूगंफली पाउडर - Peanut Powder - 1/2 Cup
नारियल का बुरादा - Desiccated Coconut - 4 tbsp
तिल - Sesame Seeds - 2 tbsp
काजू - Cashews - 1 tbsp, chopped
किशमिश - Raisins - 1 tbsp, chopped
अदरक - Ginger - 1 tsp, grated
हरी मिर्च - Green Chilli - 1 tsp, finely chopped
काली मिर्च - Black Pepper - 1/2 tsp, crushed
सेंधा नमक - Rock Salt - 3/4 tsp
पिसी चीनी - Powdered Sugar - 3 tsp
हरा धनिया - Coriander Leaves - 2 tsp
अनारदाना - Pomegranate - 3 tsp
नींबू - Lemon - 1 no
तेल - Oil - 2 tbsp
Feralli Chutney
हरा धनिया - Coriander Leaves - 1 Cup
हरी मिर्च - Green Chilli - 2 no
अदरक - Ginger - 1/2 inch
सेंधा नमक - Rock Salt - 3/4 tsp
जीरा पाउडर - Cumin Powder - 1/2 tsp
दही - Curd - 1/4 Cup

Directions

1. In a bowl grate boiled potatoes. Then add rock salt, black pepper, and arrowroot. Mix well and knead a soft dough, add more arrowroot if needed. After kneading, keep it covered.
2. In a bowl add peanut powder, dessicated coconut, sesame seeds, chopped cashew, chopped raisins, grated ginger, green chilli, black pepper, rock salt,sugar powder, coriander leaves, pomegranate seeds and lemon juice. Mix well.
3. Make 6 stuffing balls for stuffed vada.
4. Then add the rest of the stuffing to the dough and knead well, add arrowroot if needed.
5. Make 6 balls for mixed buff vada.
6. Then 6 tikki shaped balls for tikki buff vada.
7. Heat the oil, it should be medium-high hot oil and flame should be medium-high.
8. Put stuffed vada in to fry. When fried a bit, turn up the flame to high and flip and fry till golden brown.
9. When fried, take them out and fry mixed buff vada the same way.
10. Heat less oil in another pan to shallow fry tikki buff vada. Flip and fry at low-medium flame till golden brown from both sides.
11. Grind coriander leaves, ginger, green chilli, rock salt, cumin powder, curd and water. Make a fine paste, farali chutney will be ready.
