Chicken Tikka Masala Pasta (serves 6-7)

Ingredients:
4 tbsp thick-hung yogurt
1 tsp ginger garlic paste
1 tsp salt (as rq)
1 tbsp vinegar
a pinch of red food color
1 tsp garam masala powder
1 tsp red chili powder
1/4 tsp turmeric powder
400g boneless chicken
oil
300g finely chopped onion
1/4 tsp salt
1 tbsp ginger garlic paste
200g fresh tomato puree
1 tsp garam masala powder
1-1.5 tbsp red chili powder
1 tbsp tomato paste
paste of 6-8 cashews and 10 almonds soaked
1/2 cup cashew blended jar rinsed water
300 - 400g pasta
1 tsp salt (as rq)
125ml cream
1/2 cup pasta water (as rq - depending on your consistency
1 tsp kasuri methi
cream (for garnish)
coriander leaves (for garnish)


Procedure:
1. In a bowl, add 4 tbsp thick-hung yogurt, 1 tsp ginger garlic paste, 1 tsp salt (as rq), 1 tbsp vinegar, a pinch of red food color, 1 tsp garam masala powder, 1 tsp red chili powder, and 1/4 tsp turmeric powder. Mix.
2. Add 400g boneless chicken and mix.
3. Marinate it for 4-5 hours or overnight.
4. In a pan, add some oil and marinated chicken.
5. Fry both sides on high flame for 2-3 mins.
6. Then, lower the flame and cook till done.
7. Remove and keep it aside.
8. Add oil and 300g finely chopped onion and 1/4 tsp salt.
9. Fry till it turns light gold. Add 1 tbsp ginger garlic paste. Fry well.
10. Add 200g fresh tomato puree. Fry well.
11. Cover and cook for 2-3 mins.
12. Add 1 tsp garam masala powder, 1-1.5 tbsp red chili powder, and 1 tbsp tomato paste. Fry well.
13. Add paste of 6-8 cashews and 10 almonds soaked. Fry.
14. Add 1/2 cup cashew blended jar rinsed water.
15. Mix, cover, and cook until oil loosens.
16. Open the lid and mix a little.
17. Add 300 - 400g pasta and 1 tsp salt (as rq). Mix.
18. Add 125ml cream and mix.
19. Add 1/2 cup pasta water (as rq - depending on your consistency) and mix.
20. Add 1 tsp kasuri methi and mix.
21. Cover and cook until done.
22. Add cooked chicken.
23. Smoke it for 2-3 mins.
24. It's done! Garnish with cream and coriander leaves.
