自制蓮蓉餡, 味道純正,淡淡的蓮蓉清香,沒有添加劑,吃著放心,但是一定要有點耐心, 因為制作比較耗時..要是想做出成功的月餅大家不要隨意減糖減油。否則會影響月餅的可口度及耐放度,而足夠的糖能增加蓮蓉餡的光澤和黏度,相反不足的糖量會導致餡料松散。看似糖和油都非常高,但是烤好的月餅甜度都剛剛好!

自制蓮蓉餡

材料:
200克 去皮蓮子
150克 白糖
40克 麥芽糖
100毫升 玉米油/食油


做法:
1.蓮子清洗幹凈,提前清水浸泡4小時以上,時間越長越容易煮爛,逐個掰開蓮子,去掉蓮子芯(蓮子芯帶苦的,一定要清理幹凈)!
2.蓮子放入鍋裏加入650毫升清水,大火燒開後轉小火,蓋上鍋蓋,但是不要關緊,留一點縫陷,燜煮35分鐘,至蓮子全部變軟
3.將蓮子以及煮蓮子的水放料理機裏分次打成蓮蓉泥。水不要加的太多,(加太多,炒蓮蓉需要炒很久才能將蓮蓉裏的水分炒幹)
4.鍋裏倒入20毫升的油, 和一大匙的糖,小火拌煮至溶解及淺褐色,加入蓮蓉泥拌勻,再將剩余的糖倒入煮至稍幹。
5. 中小火炒蓮蓉,中間分3次加入油,每次都要炒到油全部被吸收蓮蓉吸收後再加下一次。炒到稍微抱團後放麥芽糖,繼續翻炒成團,然後再炒一炒就可以了。
6. 抱成團後,離火,放置冷卻, 即可用來做月餅內餡了,如果沒立刻使用,就用保鮮膜包住,裝進保鮮袋,收入冰箱,可以大約保存2周。

Homemade lotus paste filling

Ingredient:
200g peeled lotus seeds
150g sugar
40g maltose
100ml corn oil/cooking oil


Practice:
1. Clean the lotus seeds and soak them in clean water for more than 4 hours in advance. The longer the time, the easier it will be to boil. Break the lotus seeds one by one and remove the lotus core (the lotus core is bitter, you must clean it up)
2. Put the lotus seeds into the pot and add 650ml of water. After the high heat is boiled, turn to low heat. Cover the pot, but do not close it tightly. Leave a little seam and simmer for 35 minutes until the lotus seeds are all soft.
3. Put the lotus seeds and a little bit water in the blend to make lotus puree. Do not add too much water (add too much, it takes a long time to fry until dry)
4. Pour 20ml of oil, and a tablespoon of sugar into the non-stick pot, simmer on low heat until dissolved and light brown, add lotus paste, mix well, then pour in the remaining sugar and cook until slightly dry.
5. Stir-fry lotus seed paste over medium and small fire, adding oil in 3 times in the middle, each time until all the oil is absorbed by the lotus seed paste, add the next time. Stir-fry until thicken, then add maltose, cook until puree thickens, smooth and silky paste formed
6. After forming into a dough, remove from the fire and let it cool. It can be used to make mooncake fillings. If it is not used immediately, wrap it with plastic wrap, put it in a fresh-keeping bag, and store it in the refrigerator. It can be stored for about 2 weeks.
