Stuffed eggplant pickle is one of the most delicious homemade pickles that just smells like vinegar and aromatic herbs!

For the inside of the eggplants, we put a mixture of garlic, grated carrots, and herbs such as dried mint. You can use herbs such as (tarragon, parsley, coriander, and sometimes a little savory or dill), salt, and vinegar.
We chop all the ingredients finely to make a fragrant sauce that, when placed inside the eggplant, its flavor goes deep into its heart 🌿🔥

After we have stuffed the eggplants, we carefully place them in a jar and pour vinegar to the top until they are completely covered.
We wait a few days for the pickle to settle and its color to become dark and beautiful.
