In this video I show you how to make Japanese Shochu with Purple Sweet Potatoes.

Bearded’s Purple Sweet Potato Shochu Recipe:
5 pounds(2.26Kg) of short grain rice
Koji - Aspergiilus Luchuensis - Black Koji - https://www.fermentationculture.eu/sh...

1. Steam your rice for 1 hour, then cool to room temperature.
2. While the rice is steaming and cooling toast ½ cup of flour in a dry pan on medium heat until you just barely smell the flour cooking, then turn off the heat, cover and let the flour cool to room temp. Once it’s cool, mix in your koji spores thoroughly.
3. Once the rice is cool, sprinkle the koji/flour mixture over the rice and stir it well to coat the rice grains.
4. Store rice in a very warm place, 95-98F with 80% humidity for 2 days to allow the koji mold to grow.
5. Once the koji rice is well propagated, add 1 gallon of water and yeast. Allow it to ferment for 5-6 days. STIR IT SEVERAL TIMES A DAY to aid in fermentation.
6. Boil your sweet potatoes in 4 gallons of water until soft, then cool them to room temp and blend until smooth, add them to the fermenting rice mixture and let it ferment for 9-10 days. STIR IT SEVERAL TIMES A DAY!
7. When fermentation is complete, strain the wash and use a clarifying agent like Super Kleer if desired. You can now hypothetically distill it in a single slow pot still run.
