Do try this Eggless Lemon Cake which is moist, fluffy and absolutely delicious 😋! It’s a refreshing cake made with whole wheat flour, sweetened with jaggery and packed with a zesty-zingy lemony flavor. On top of that it’s vegan & dairy free too !!

INGREDIENTS
*1 cup whole wheat flour / गेहूं आटा
*1 tsp baking powder / बेकिंग पाउडर
*1/4 tsp baking soda / बेकिंग सोडा
*A pinch of turmeric powder to add color( optional ) / हल्दी पाउडर
*1/4 cup oil ( any neutral oil )/ तेल
*6 tbsp Jaggery powder/ गुड़ पाउडर
*2 1/2 tbsp lemon juice / नींबू रस
*1/2 tsp lemon zest/ लेमन ज़ेस्ट
*1/2 cup + 2 tbsp milk of your choice/ मिल्क

Cashew Cream Frosting
*1/3 cup chopped cashew / काजू
*2 tbsp pure maple syrup or honey / मेपल सिरप या शहद
*2 tsp lemon juice/ नींबू रस
*1/4 tsp vanilla extract / वनिला

INSTRUCTIONS
1- In a medium sized bowl, add whole wheat flour, baking powder, baking soda, turmeric and mix well till everything is well combined. Keep this dry mixture aside.
2- In another bowl, add oil and jaggery and give a good mix till well combined. Now add in the lemon juice, lemon zest ( make sure to grate the only outer yellow skin and avoid the white part because that can cause the cake to be bitter ) and milk. Give a quick mix, add in the dry mixture and mix gently till well incorporated ( make sure not to over mix ).
3- At this stage preheat the oven at 180°C/ 350°F for around 10-15 minutes. Pour the cake batter in a parchment paper lined desired cake pan and bake it in a preheated oven at 180°C/ 350°F for 25-30 minutes. Make sure to check it with a toothpick by inserting in the center, if doesn’t come clean bake for 5 more minutes. Allow the cake to cool for sometime.
4- For Cashew Cream, add cashews in a bowl followed by some hot water. Cover the bowl and let the cashews soak for around 15 minutes or till they turn soft. Drain the cashews and add them in a blender along with lemon juice, maple syrup and vanilla extract. Blend till smooth and creamy.
5- Slice the cake, top it up with cashew cream and enjoy!!
