Bozbash is an Azerbaijani rich, hearty soup, in which there are only two mandatory ingredients: meat and chickpeas. Depending on the season, taste preferences and region, the soup is prepared with the addition of sour or sweet-sour vegetables or fruits (tomatoes, cherry plum, unripe quince), various roots, onions, spicy seasonings. In most recipes for bozbash, beef with fat or on a bone or young lamb meat is taken. Chickpeas are soaked overnight or for 10-12 hours before cooking. The cooking technology remains unchanged, despite the difference in the added ingredients. First, the meat is cooked in a large amount of liquid until almost ready. Approximately in the middle of cooking, onions and chickpeas are added, thoroughly boiled together with meat. Then add the rest of the products and cook until ready. Bozbash is served in bowls, filled first with vegetables and meat and then poured with broth.

beef - 500 g, chickpeas - 0.5 cup,
tomatoes - 5 pcs, potatoes - 4 pcs,
onion - 1 pc, salt - 1 tsp,
pepper - 8 pcs, water - 2 liters,
