Samosas are the most favorite fried snack item in many Asian countries. My childhood memories of getting freshly fried samosas from right across the street just want me to go back in time. These crispy, crunchy, and stuffed fried snacks are a must-have, especially on cold winter days.
Let me show you how I make them. I am not adding turmeric and garam masala to my filling as my kids won't eat it then, but I have added those spices to the recipe.

MEK Potato Samosas

For the pastry:
2 cups all-purpose flour
¼ cup ghee or coconut oil
½ tsp ajwain seeds
1 tsp salt
About ½ cup ice cold water- adjust the water requirement according to your flour quality. In the end, we are looking for a slightly tight dough.

Combine flour, salt, ajwine, and ghee. Now rub between your hands to incorporate the ghee. Start adding ice water slowly and knead your dough. If the dough is hard and resisting then let it rest for five minutes and then knead again. Cover it and keep it in a cool place till we prepare the rest.

For the filling:
About 1 ½ - 2 lbs boiled potatoes- Boil with the skin on till tender and any potato variety will work.
2 tbsp oil
1 tsp grated ginger
½ tsp mustard seeds
½ tsp red chili flakes
1 tsp cumin seeds
1/2 tsp turmeric powder
1/4 tsp garam masala, allspice powder
1 cup sweet peas
1 tbsp lemon juice
½ tsp black pepper
½ -1 tsp salt, adjust to your liking
Fresh cilantro and green chili
A pot of veg oil for deep frying

Boil the potatoes with the skin on. Peel them once cooled. Dice them into chunks and mash some of the chunks.
Add oil to the pan and fry ginger and all the spices in there for a minute. Add peas and potatoes to it and adjust the seasoning. Drizzle lemon juice and cilantro on it. Remove from heat and let them cool.
Divide the dough in half and roll each half into ⅛ or a bit less thickness. Cut out parts from the dough as shown in the long detailed video on my YouTube channel homepage. Fill and shape your samosas as can be seen in the video.
Heat your oil in the pot to 375 F and fry your samosas. Fry them until they are nicely golden in color. Serve with homemade tamarind chutney or ketchup. Enjoy!
