Today I’m homemaking on the farm. I’ve got some tips on eating seasonally as well as a recipe for corn chowder soup - a seasonal favourite!

BACON CORN CHOWDER SOUP

• 4 ears of corn, shaved • 1 tsp onion flakes
• 1 large onion, diced • 1/2 tsp celery seed
• 4 stalk celery, sliced • 1 tsp dried thyme
• 2 red bell peppers, diced
• 6 small yellow potatoes, cubed
• 1 clove garlic, minced
• 2 containers chicken broth (about 6 cups)
• 2 bay leaves
• 1 1/2 cups half and half cream
• 1 package bacon, cooked and crumbled
• salt and pepper to taste

In a large Dutch oven add 1 tbsp oil or bacon grease on medium heat. Add onions and celery. Cook until translucent. Add corn, red pepper and garlic. Cook another few minutes, then add chicken broth, seasonings, potatoes and corn cobs (if using fresh corn). Bring to a boil, then reduce to a simmer. Continue cooking until veggies are soft and potatoes are tender, about 1 hour.
Add the half and half cream and half the bacon just before serving. Taste and adjust seasonings.

Serve with a dollop of sour cream, chives or green onions and reserved bacon.

Serves 6-8
