Bongulo Chicken is made by cutting small pieces of raw chicken, which is marinated with ginger and traditional spices and herbs like coriander leaves. This marinated chicken is stuffed inside a bamboo shoot, which is open from one end and the other end is covered by stuffing the Sal leaves, these leaves are locally known as Adda. The bamboo shoot is added to coal fire and turned with tongs so that the dish cooks evenly. Once the bamboo shoot turns black from the outside, it indicates that the dish is cooked completely. The leaves are removed and the dish is served on Sal leaves and served hot. This dish has been so popular that the Andhra Government has restricted the making of this dish outside the region, which has helped in flourishing the business of local sellers.
