These baked teatime treats are delicious, quick, and easy to prepare. Just follow the recipe and you will be home safe. Today's teatime treats are Lemon Madeleines, Vanilla Queen Cakes, Lemonade Scones, Chocolate Muffins, and Orange Queen Cakes.

Tips: For the madeleines and queen cakes, I made sure that their batter was cold and gave them thermal shock using high heat then reduced it a few minutes later.
The coffee in the chocolate muffins is optional but it enhances the chocolate flavor.

1. LEMON MADELEINES

These rich petite sponge cakes are delicate and buttery. They are easy to make and indulgently delicious. Madeleines are often eaten for breakfast or dessert. They are traditionally served with afternoon tea or plain as part of a dessert or dessert buffet.
They are a cross between cake and biscuits or cookies. They get their flavor from sugar and eggs. They are a typical French pastry enjoyed with tea.
Store them in an airtight glass container, not plastic, to keep them moist once baked.

FOLLOW THESE EASY STEP BY STEP TO GET THE BEST RESULTS

1. 100g unsalted butter melt (7-8 tbsp)
2. Zest of 1 medium lemon
80g granulated sugar (5 tbsp)
1/4 tsp or pinch of salt
3. In a different bowl:
3 large eggs (110g) + 20g honey (1&1/2 tbs
4. Whisk until egg color changes to pale yellow to aerate the mixture
5. Sift in 100g cake FLOUR or (2/4 cup plus 1 tbsp) both measurements work
3,5g *BAKING POWDER (just over 1/2 tsp)
6. Gentle fold the batter with a spatula (no whisking)
7. Add warm melted butter so that butter does not harden as you mix and for your batter to be smooth. The butter should be between 40°-50°C and 104° -122°F. Mix with a spatula until the batter is even.
8. Add 1 tsp *lemon juice & mix with a spatula. The spatula will help check if all the batter is blended well.
9. Rest the batter in the fridge for a minimum of 1 hour but for best results chill overnight.
N.B.: Do not to skip the resting time of the dough because it lowers the dough's temperature.
10. Apply melted or soft unsalted butter on your pan cavities
Dust flour on top -do not skip this part. Let flour touch every part of cavity surface and then remove excess flour.
11. Refrigerate the pan until ready to use
12. Preheat oven for at least fifteen minutes before baking at 395°F or 200°C
13. Pipe pour or spoon the batter into the molds
Fill the molds 80% -85%, do not fill to the brink to avoid spillage
14. Put the tray in the *freezer for 10 minutes to prepare for thermal shock and that will create a perfect hump or mountain heap when the madeleines are baked
15. Bake them @ 200°C or 392 degrees F between 6 minutes, then 150 degrees C or 302 degrees F for 3 minutes (9 minutes maximum) or until the mountain tops are no longer wet on the top shelf.
*Keep an eye on them to avoid them burning because ovens are not the same. There's a batch that I baked for 9 min and it came out looking like it is burnt. The ones that looked good are the ones that took 6 minutes.
16. Cool them by laying them on their sides or side by side

GLAZING -Optional
Lemon Icing:
100g icing sugar
1 tbsp orange or lemon juice
1 tsp water
1 tsp lemon essence -optional

2. VANILLA QUEEN CAKES
Dry ingredients:
3 cups plain flour
3 tsp baking powder
1/4 tsp salt
1 cup granulated sugar

Wet ingredients:
2 eggs
1 1/3 cups fresh milk
1 tsp vanilla essence or extract
2/3 cups vegetable oil
Bake at 180 degrees C for 20 minutes

3. LEMONADE SCONES
Ingredients

2 3/4 cups self raising flour
150 ml cold lemonade
150 ml cold heavy cream
Bake at 220 degrees C or 428 degrees F for 12-15 minutes

4. CHOCOLATE MUFFINS
Preheat to 190°C / 374°F then TURN DOWN TO (170°C fan or 325 degrees F). Bake a further 20 minutes, checking at 15 minutes. I loved the results at 15 minutes, the muffins were gooey.
When toothpick comes out clean they're ready. Don't confuse melted chocolate with raw batter!

INGREDIENTS

1 3/4 cups cake flour
1 1/4 tsp bicarbonate of soda or 4 tsp baking powder
1/2 tsp salt
1/2 cup cocoa powder
1 tbsp coffee powder
1 cup muscovado (brown) sugar
1/2 cup oil
1 large egg
3/4 cup sour cream
1 tsp vanilla extract
3/4 cup fresh milk, hot
1 1/2 cups chocolate chips or baking chocolate

5. ORANGE INFUSED QUEEN CAKES

INGREDIENTS:
375g butter, softened
375 castor sugar (1 3/4 cups)
2 large eggs
1 tsp orange essence
2 tbsp orange zest
375g flour (3 cups)
3 tsp baking powder
1 1/4 cups freshly squeezed orange juice

For Orange Glaze:
1 cup icing sugar
1/4 cup orange juice
1 tbsp orange zest
1 tsp orange essence

Bake at 180 degrees C/356 degrees F Standard oven
