Delicious Biryani made in clay pot cooked over charcoal.

Ingredients :

1 and 1/2 KG Beef (or any meat of your choice)
375 gms Potatoes cut in halves
1 and 1/2 Tbsp Ginger and Garlic paste
1 Tsp Turmeric powder
1 Tbsp crushed dry red chillies
1 Tbsp red chilli powder
1 Tsp black pepper crushed
1 Tbsp garam masala powder
1 and 1/2 Tbsp salt
4 Tbsp white vinegar
2 cups water

Add all the above ingredients in clay pot (matka) and mix well then leave covered for one hour.

Further Ingredients:

1 Tbsp garam masala powder
2 Tbsp saffron rose water (zafrani Kewra)
2 tomatoes sliced
2 small green chillies chopped
3 medium green chillies sliced in halves
1 cup fried red onions
1 hand full of fresh coriander and mint leaves chopped roughly

Ingredients for rice preparation:

4 cups parboiled(Sella) basmati rice washed and soaked for two hours
5 tbsp salt
1/2 tsp whole black pepper
4 cloves
4 green cardamom
4 black cardamom
2 bay leaves
three litres water in cooking pot
I cup oil

Recipe:

Boil water add salt and whole spices and also burn charcoal.

In the mean while after an hour has passed to the marinating pot add all the further ingredients in the clay pot.

As the water for rice starts to boil add drained rice to the boiling water, take out 1/3rd of the rice immediately after 3 minutes and add to the marinating pot. After eight minutes take out all the rice and add above the previously added rice in the pot.

Then pour 1 cup oil all over the rice. cover with aluminium foil then place the lid on top and keep on the burning coals for 45 minutes, then remove from coals and revolve the pot few times then remove lid and foil. With the back of a wooden spoon or spatula insert from the three sides one by one in the pot and push the meat from the bottom slightly upwards to check if the meat is not stuck to the bottom, add some fresh coriander and fried onions then cover with foil and lid and keep on coals again for 15 minutes for (dum) simmering. After 15 minutes remove from coal and serve.
