Summer is coming very soon, the weather is getting warmer. I have some pineapples, so I'm gonna make a snack using pineapple.
In Taiwan, Pineapple Cake called Fenglisu is the most popular signature food for gift.
In Indonesia, Pineapple Cookies called Nastar is the most wanted traditional cookies.
I was inspired by those amazing pineapple dishes, so today I'm gonna make Pineapple Tart Cookies using pineapple shaped mold, with homemade pineapple jam filling and I'll add some twist, adding cheese in the middle. so here's the recipe :

Filling :
350 gr pineapple smoothie (from about 500gr pineapple)
50 gr sugar
a pinch of salt
10 small pieces of cheese

Crust :
100 gr butter
80 gr margarine (plant based butter)
*you can adjust the ratio of butter and margarine, but going full 180 gr butter will make the dough too crumbly and hard to shape
2 egg yolks
30 gr powdered / icing sugar
25 gr powdered milk
300 gr all purpose flour
a pinch of salt

flour - for dusting the mold
milk, honey, egg yolk - for brushing the dough to make it shiny (optional)

note :
freezing the dough before baking will prevent it from rising.
rising dough when baked will make some cracks and the shape looks ugly
