Resep Ayam Lado Ijo (untuk 10 porsi)
Bahan marinasi:
1 kg ayam negri utuh
6 siung bawang putih, opsional
1 sdt perasan jeruk nipis
2 sdt garam
1 sdt kaldu jamur
2 sdt gula pasir
½ sdt merica
Bahan sambal:
100 gr cabai hijau keriting
150 gr cabai hijau
35 gr cabai rawit hijau
1 L air
1 sdt baking soda
1 sdt garam
10 siung bawang merah
10 siung bawang putih
70 ml minyak
Bahan iris:
6 siung bawang merah
1-2 buah tomat hijau
Bahan aromatik:
1 lembar daun salam
1 batang serai
5 cm lengkuas
8 lembar daun jeruk
Bahan lainnya:
1 sdt garam
1 sdt kaldu jamur
½ sdm gula pasir
½ sdt merica
100 ml air
Pelengkap:
nasi putih
timun
Cara membuat:
1. Potong ayam menjadi 10 bagian lalu marinasi dengan bawang putih parut, perasan jeruk nipis, garam, merica, kaldu jamur dan gula pasir, aduk rata. Diamkan selama 15-30 menit
2. Didihkan air, masukkan cabai keriting hijau, cabai hijau, cabai rawit hijau, baking soda dan garam, masak selama 5 menit lalu pada 2 menit terakhir masukkan bawang merah dan bawang putih
3. Ulek cabai yang sudah di rebus dengan ulekan hingga sedikit kasar
4. Geprek lengkuas, serai, iris bawang merah dan potong tomat hijau
5. Panaskan minyak, tumis bawang merah hingga wangi dan setengan matang kemudian masukkan serai, lengkuas, daun salam, daun jeruk, tumis sesaat hingga wangi
6. Masukkan ayam, tumis hingga sedikit kecokelatan kemudian tambahkan air, masak hingga menyusut
7. Masukkan sambal hijau, tomat hijau, garam, kaldu jamur, gula pasir dan merica, masak sesaat
8. Ayam lado ijo siap disajikan

Green Sambal Chicken Recipe (yield 10 servings)
Marinating ingredients:
1 kg whole chicken
6 clove garlic, optional
1 tsp lime juice
2 tsp salt
1 tsp mushroom stock powder
2 tsp sugar
½ tsp pepper
Sambal ingredients:
100 g curly green chili
150 g green chili
35 g green Thai chili
1 L water
1 tsp baking soda
1 tsp salt
10 pc shallot
10 clove garlic
70 ml oil
Sliced ingredient:
6 pc shallot
1-2 pc green tomato
Aromatics:
1 pc bay leaf
1 stalk lemongrass
5 cm galangal
8 pc kaffir lime leaf
Other ingredients:
1 tsp salt
1 tsp mushroom broth
½ tbsp sugar
½ tsp pepper
100 ml water
Add-ons:
Rice

Steps:
1. Cut the chicken into 10 pieces. Marinate with grated garlic, lime juice, salt, pepper, mushroom powder, and sugar. Mix well. Marinate for 15-30 minutes.
2. Bring water to a boil. Add curly green chili, green chili, green Thai chili, baking soda, and salt. Cook for 5 minutes, then in the last 2 minutes add shallots and garlic.
3. Crush the boiled chilies with a mortar and pestle until slightly coarse.
4. Bruise the galangal and lemongrass. Slice the shallots and green tomatoes.
5. Heat oil. Sauté the shallots until fragrant and halfway cooked, then add lemongrass, galangal, bay leaf, kaffir lime leaf. Sauté briefly until fragrant.
6. Add the chicken. Sauté until lightly browned, then add water. Cook until reduced.
7. Add the Green Sambal, green tomatoes, salt, mushroom powder, sugar, and pepper. Cook briefly.
