瓜衫南瓜湯

材料:
瓜衫魚1斤
南瓜1斤
薑1舊

處理:
1. 瓜衫,打鱗,清除內臟,清水洗乾淨,擎乾水。
2. 薑,去皮,拍鬆。

烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 另一邊,大火煲滾水1升半。
3. 放魚及薑落鑊,一面煎至金黃色,反轉魚繼續煎。
4. 魚,兩面已煎至金黃色,水亦已煲滾,灒滾水在魚內,大火滾起,滾15分鐘。
5. 南瓜,刮去囊,打直切開幾舊,刨去皮,切細舊,放入煲。
6. 魚湯已滾了15分鐘,用隔篩過濾魚湯在南瓜內。
7. 魚湯,大火煲10~15分鐘。
8. 南瓜已煲腍。
9. 完成,倒入大碗內,可享用。

Japanese threadfin bream pumpkin soup

Ingredients:
Japanese threadfin bream 1 catty
Pumpkin 1 catty
Ginger 1 No.

Preparation:
1. Japanese threadfin bream, get it scaled. Remove its intestines. Rinse thoroughly. Hang dry.
2. Ginger, get it peeled. Beat well.

Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Heat up water 1.5L on the other side.
3. Put fish and ginger in wok. One side has been fried into golden yellow, flip it over and continue frying.
4. The fish, both sides have been fried into golden yellow, water boils up. The wok, turns to high flame, pour boiled~up water in it. Heat up at high flame. Cook for 15 minutes.
5. Pumpkin, remove the seeds. Cut vertically into several pieces. Get it peeled. Cut into small pieces. Put into pot.
6. Fish soup has been cooked for 15 minutes, filter it into the pumpkin.
7. Fish soup, boil it at high flame for 10~15 minutes.
8. Pumpkin, has been softly boiled.
9. Complete. Pour into a big bowl. Serve.
