Yunnan cuisine, alternatively known as Dian cuisine, is an amalgam of the cuisines of the Han Chinese and other ethnic minority groups in Yunnan Province in southwestern China. As the province with the largest number of ethnic minority groups, Yunnan cuisine is vastly varied, and it is difficult to make generalizations. Many Yunnan dishes are quite spicy, and mushrooms are featured prominently.
Yunnan cuisine is unique in China for its cheeses like Rubing and Rushan cheese made by the Bai people. Other influences include Mongolian influence during the Yuan dynasty (Central Asian settlement in Yunnan), and the proximity and influence of India and Tibet on Yunnan. Ingredients for 5 persons:
1 kg chicken breast or other parts
250gr dried jujubes (red dates)
100gr dried longan (lychee type fruit)
6cm fresh ginger
10 garlic gloves
5 shallots
1 bunch fresh mint
½ bunch cilantro (fresh coriander)
1 tbsp Nuoc mam (fish sauce)
1 liter chicken stock
3 tbsp light soy sauce
2 tbsp cooking wine (Shaoxing rice wine)
1 tbsp Sichuan peppercorns
½ cup dried black fungus
5 Kafir lime leaves
½ cup vegetable oil
Course sea salt to adjust
4 dried hot chilies if you like it hot
Serve with rice noodles or the side dish of your choice
