Traditional Dana Muthiya Vegetable Recipe | Kathiawadi Swad!
🥘 Ingredients Used in the Recipe
200g Fresh Tuwer Seeds (Pigeon Peas)
Fresh Tuwer Leaves
*For the Masala*:
6-7 Garlic Cloves (skip if you prefer no garlic)
3 Green Chilies
1 Small Piece of Ginger (chopped)
Fresh Coconut (grated)

*For Muthiyas*:
3 tbsp Wheat Flour
Optional: Use Gram Flour for softer muthiyas
Spices:
½ tsp Turmeric
½ tsp Red Chili Powder
1 tsp Sugar
Salt to taste
1 tsp Coriander Powder
2 tbsp Oil for kneading
Water (very little, just 2 tbsp)

*For Tempering & Gravy*:
½ tsp Mustard Seeds
½ tsp Cumin Seeds
15-20 Fenugreek Seeds
Pinch of Asafoetida
4 Cloves
3 Cinnamon Sticks
Sweet Neem Leaves
3 Medium Tomatoes (pureed)
2 tsp Red Chili Powder
½ tsp Turmeric
1 tsp Coriander Powder
Lemon Juice (½ lemon)
Fresh Coriander (for garnish)

🥘 Method
1. *Prepare the Masala*: Grind garlic, green chilies, ginger, and fresh coconut into a paste without water.
2. *Make the Muthiya Dough*: Mix wheat flour, masala spices, and 2 tbsp oil. Add water carefully (just 2 tbsp) to knead a soft dough. Form small balls (muthiyas).
3. *Cook Tuwer Seeds*: Heat 1 tbsp oil in a pan, sauté tuwer seeds with salt and turmeric. Add water, bring to a boil, then add muthiyas. Cook for 20 minutes.
4. *Prepare the Gravy*:
Heat oil, add mustard seeds, cumin, fenugreek seeds, asafoetida, cloves, cinnamon, and neem leaves.
Sauté tomato puree and spices (red chili, turmeric, coriander, and salt) until oil separates.
5. *Combine Everything*: Add the boiled tuwer seeds, muthiyas, and water to the gravy. Simmer for a few minutes.
6. *Finish & Garnish*: Add lemon juice, sugar, and fresh coriander. Serve hot!
