***note: this recipe may leave you with softer peppers than desired.
To preserve your pepper's crunchiness try these few tricks:
1. Only use the freshest peppers you can find
2. Soak them in an ice water bath for at least 30 minutes before packing
3. Add products like "pickling crisp" or for a more organic solution- fresh grape or oak leaves to each jar
