Company's Coming! A Busy Day in the Life (DITL) PLUS...Making Homemade Mayonnaise!!

We have another large family coming to visit!! It's a busy day of cooking a large quantity of food, cleaning the house, and tidying up the yard before friends came over for supper. We work together and divide up the tasks in order to get the job done! PLUS...we make homemade mayonnaise for a 7 layer salad. (Recipe at the bottom of the description box!)

Homemade Mayonnaise

2 fresh eggs
1 lemon, juiced (approximately 2 Tbsp.)
1/2 tsp. ground mustard seed powder
1/4 tsp. salt
1/8 tsp. pepper
2 cups oil (I like extra virgin olive oil)

Place first 5 ingredients in a jar or container with steep sides and blend together with immersion blender. Add the 2 cups of oil in a slow, steady stream while continuing to blend. The mixture will thicken and you will hear a change in sound when everything is blended together and thick!! Will keep in refrigerator about 2 weeks.
