1. 4 Ingredients Peanut Butter Cookies
📌Ingredients:
1 cup peanut butter
1/4 cup brown sugar
1 egg
1/4 tsp baking powder
📌Instructions:
Add peanut butter, brown sugar, egg, and baking powder to a bowl
Combine well to form a cookie dough
Scoop out a 1-inch cookie ball, flatten, and shape into a cookie
Create a pattern on the cookie using a fork
Bake in a preheated oven at 350°F for 9–11 minutes
Allow the cookies to cool slightly, then enjoy them warm and soft
2. Peanut Butter Raspberry Jam Cookies
📌 Ingredients:
1 cup almond flour
1/2 cup peanut butter
1/4 cup maple syrup
1/8 tsp salt
1 tsp vanilla extract (optional)
1/2 cup crushed peanuts
1/2 cup raspberry jam
📌 Instructions:
In a bowl, mix together the almond flour, peanut butter, maple syrup, salt, and vanilla extract until a dough forms
Divide the dough into 1-inch cookie balls using lightly wet hands
Coat each cookie ball evenly with crushed peanuts
Make a small indent in the center of each cookie using a spoon or thumb
Fill each indent with a small spoonful of raspberry jam
Place the cookies on a lined baking tray. These cookies will not expand much
Bake in a preheated oven at 350°F (175°C) for 9–10 minutes
Allow the cookies to slightly cool before serving
3. Pumpkin Snickerdoodle Cookies
📝 Ingredients
Cookie Dough
6 tbsp soft butter
1/3 cup maple yyrup
1 egg yolk
1/4 cup pumpkin puree
1 cup + 2tbsp whole wheat flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
(1/4 + 1/8) tsp baking soda
1/2 tsp salt
1.5 tsp vanilla extract
Cinnamon Sugar
1 tsp ground cinnamon
1/4 cup sugar
Pumpkin Cream Filling
1/4 cup reduced pumpkin puree
1.5 tbsp condensed milk
1/2 tsp pumpkin pie spice
Melted white chocolate for topping
📝 Instructions:
Whip softened butter (at room temperature) until smooth and fluff. Add maple syrup and continue whipping until soft and creamy
Add the egg yolk and reduced pumpkin purée, then whisk everything together until well combined
In a separate bowl, combine whole wheat flour, ground cinnamon, ground nutmeg, baking soda, and salt. Mix well
Gradually add the dry ingredients into the butter mixture
Add vanilla extract and mix until a dough forms
Refrigerate the cookie dough for 30 minutes
Scoop out the dough and shape into 2-inch balls. This recipe makes about 9 cookies.
Mix together ground cinnamon and sugar to prepare cinnamon sugar
Coat each dough ball evenly in the cinnamon ,sugar, then place them on a lined baking tray
Use a spoon or thumb to make a small indentation in the center of each cookie
Refrigerate the cookies again for 15 minutes
Prepare the pumpkin cream filling by mixing pumpkin, condensed milk, and pumpkin pie spice until smooth
Top each cookie with 1–2 tablespoons of pumpkin cream filling
-In a preheated oven, bake at 350°F (175°C) for 20–25 minutes, until the edges are golden
Allow cookies to cool completely
Drizzle melted white chocolate over the cooled cookies

4. Gingerbread Cookies
📌Ingredients:
1 cup almond flour
1/4 cup whole wheat flour
3 tbsp brown sugar
2 tbsp milk
1½ tsp ginger powder
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
A pinch of salt
1/4 tsp baking powder
1 cup icing sugar
2 tbsp milk
📌Instructions:
In a bowl, mix together milk, brown sugar, ginger powder, ground cinnamon, ground nutmeg, and a pinch of salt
Add almond flour, whole wheat flour, and baking powder to the wet ingredients and mix to form a dough
Rest the dough in the refrigerator for 30 minutes
Roll out the dough to ½ cm thick and cut the cookies into your preferred shapes
Bake the cookies at 350°F for 9 to 11 minutes
For the icing, mix icing sugar and milk until it reaches a piping consistency
Once cooled, decorate the cookies with designs of your choice
Rest for 30 minutes until the icing sets and enjoy!
