Recipe in English:
Ingredients:
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) with stem handful
-Lehsan (Garlic) 3-4 cloves
-Zeera (Cumin seeds) ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Hari mirch (Green chillies) 2-3
-Iodized Himalayan pink salt ½ tsp or to taste
-Imli pulp (Tamarind pulp) 3 tbs
-Water 2-3 tbs
-Boneless chicken 500g
-Hara dhania (Fresh coriander) 1-2 tbs
-Hari mirch (Green chillies) 2-3
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Lemon juice 1 tbs
-Ghee (Clarified butter) 1 tbs
-Iodized Himalayan pink salt 1 tsp or to taste
-Dhania powder (Coriander powder) 2 tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp
-Garam masala powder ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Cooking oil 1 tsp
-Cooking oil 2 tbs
-Maida (All-purpose flour) sifted 1 & ¼ Cup
-Chakki ka atta (Whole wheat flour) sifted ¼ Cup
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Baking soda ½ tsp
-Dahi (Yogurt) 3 tbs
-Warm water ½ Cup or as required
-Cooking oil 1 tsp
-Makhan (Butter) soft
-Hara dhania (Fresh coriander) chopped
Directions:
-In a blending jar,add mint leaves,fresh coriander,garlic,cumin seeds,red chilli crushed,green chillies, pink salt,tamarind pulp,water & blend well.Green chutney is ready & transfer to a piping bag.
-In a chopper,add chicken,fresh coriander,green chillies,ginger garlic paste,lemon juice,clarified butter, pink salt,coriander powder,kashmiri red chilli powder,garam masala powder,turmeric powder,cumin powder,red chilli powder & chop until well combined.
-Grease plastic sheet with cooking oil,add chicken mixture (40g),cover with plastic sheet & flatten it, remove plastic sheet,add prepared green chutney & fold to make a kabab (makes 12-14).
-In frying pan,heat cooking oil & fry on low flame from all sides until golden
-Let them cool completely.
-In a bowl,add all-purpose flour,whole wheat flour,pink salt,baking soda,yogurt & mix well until it crumbles.
-Add warm water,mix well & knead until dough is formed.
-Add cooking oil & mix well,cover & let it rest for 1 hour.
-Sprinkle dry flour & knead again until smooth.
-Take a dough (100g),sprinkle dry flour & roll out with the help of rolling pin as thin as possible.
-Cut into strips (2cm wide) with the help of the cutter & roll naan strip on kabab,press & seal properly.
-In frying pan,place stuffed kababs & cook on low flame from all sides until light golden.
-Apply butter,sprinkle fresh coriander & serve!
