Ingredients
For Dal-Rice Base:

1 cup short-grain rice
⅓ cup split yellow moong dal
⅓ cup chana dal
⅓ cup split urad dal with skin
6 cups water
Salt to taste
½ tsp turmeric powder
Vegetables (you can adjust to your liking):

1 onion, thinly sliced
1 carrot, finely chopped
½ cup cauliflower florets
2 tomatoes, roughly chopped
½ cup green peas
For Tempering:

1 tbsp desi ghee (or oil)
1 tsp cumin seeds
1 tbsp ginger-garlic paste
½ tsp red chili powder
½ tsp turmeric powder
Warm water (for adjusting consistency)
Fresh coriander leaves (for garnish)
Extra ghee (for finishing)

Process
Wash & Soak Dal-Rice:
Mix all three dals and rice (totaling 1 cup). Wash them well 2–3 times and soak for 1 hour.
Pressure Cook Dal-Rice:
Add the soaked dal-rice to a pressure cooker with 6 cups of water, salt, and turmeric. Cook on high flame for 1 whistle, then simmer on low for 10 minutes.
Prepare Vegetables:
While the dal-rice is cooking, chop all the vegetables—onions, carrots, cauliflower, tomatoes, and keep peas ready.
Make Tempering:
Heat ghee in a pan. Add cumin seeds, then onions. Sauté until golden.
Add ginger-garlic paste, sauté for a few seconds.
Add green peas, stir, and cook for 1–2 minutes.
Add carrots, cauliflower, and tomatoes.
Add salt and mix well. Cover and cook on low flame for 8–10 minutes.
Add Spices & Combine:
Once vegetables are soft, add red chili powder and turmeric powder. Add a splash of warm water to avoid burning.
Now, add the cooked dal-rice mixture and combine everything well.
Adjust Texture:
Add warm water if needed to get a soft, khichdi-like consistency. Mix thoroughly.
Final Touch:
Add chopped coriander and a spoon of ghee. Cover and let it rest for 5–7 minutes with the flame off.
Serve:
Serve hot with curd, pickle, or papad. Enjoy your warm, comforting, and nutritious Vegetable Masala Khichdi!
