Years ago, Founder Jim Bernau began experimenting with his favorite varietal — Pinot Noir. Taking whole clusters, Jim gently placed them into a chilled fermenter, took all the oxygen out and waited. What happened next was magical as the flavors started to develop and build inside each berry. As they burst, bright aromatics and pure flavors were released, tasting just like fruit off the vine. We knew we had something truly special.
