Delia Smith's Lemon Meringue Pie
For the pastry:
Flour 110g or 4oz
Lard 25g or 1oz
Butter 25g or 1oz
For the filling:
Egg Yolks - 2 large
Cornflour - 3 level tablespoons
Butter- 40g or 1 1/2oz
Lemons- 2 large grated rind and juice
Caster Sugar- 50g or 2oz
275ml water or 1/2 pint
For the meringue:
Egg Whites - 2 large
Caster Sugar - 110g or 4oz

Cook the pastry at 180 to 200C until golden and lower heat to 100C and pop the pie in for about half an hour keeping your eye on it until it is golden brown.
