Welcome, my name is Pene and I live in the S.E. of England with my husband Pete and four chickens. After my retirement, working for the NHS as a counsellor, I decided to do Penelope’s Chinwag.
It’s a chatty vlog about crafting, a fascinating fact about the natural world, maybe a chat with Mum or Pete and a story or poem. In episode 12 I introduced Transactional Analysis, a model of counselling that is very practical and helpful. I finish with a short film usually taken when I’m out walking round our 'block'.

Recipe for Chocolate and Salted caramel traybake - Waitrose recipe
225g unsalted butter, softened, plus extra to grease
200g Light Brown Soft Sugar
3 Eggs
1 tsp vanilla extract
70g dark chocolate, melted
150ml buttermilk - I use a squeeze of lemon into milk and leave for 10 minutes
225g self-raising flour
½ tsp bicarbonate of soda
50g cocoa powder
½ tsp fine salt

TOPPING
200g Cooks’ Ingredients Salted Caramel Icing - I used salted caramel sauce
30g dark chocolate, melted - I finished the bar.

Method

1. Preheat the oven to 180˚C, gas mark 4; lightly grease a 33cm x 22cm cake tin and line with baking parchment. Mine took just under 20 minutes to cook
