Mutton kurma with ghee rice
1 kg mutton curry cut
Pressure cook mutton with
1 tsp salt
1 tsp pepper
1 tsp turmeric powder
1 tbs meat masala
1/4 cup water
Mix everything together and
Pressure cook for 5 whistles ( after 1 whistles lower the flame )
For dry roasting masala
1tbs fennel seeds
1 tbs cumin seeds
1 mace
1 star anise
1 large size cinnamon
6 to 7 cardamom
5 cloves
1tdp turmeric powder

Dry roast on low flame and powder this to fine powder
For mutton curry
In a bottom thick pan add oil and ghee
Then add 3 cup finely chopped onions
Once it’s sauteed add ginger , garlic, green chillies, shallots
4 to 5 small pieces of ginger
20 to 30 garlic cloves
6 to 8 green chilies
1 cup shallots
Crush these ( see the texture in the video)and add to the sautéed onions , saute well and
Add 3 chopped tomatoes
Saute them and add ground masala
Then add cooked mutton , again cook for 20 minutes on low flame with lid covered, add boiling water if u prefer more gravy,

Then prepare cashew paste
1 handful coriander leaves
1 handful mint leaves
20 to 30 cashews
1/2 cup curd
3 tbs white kismiss ( u can reduce if like less sweet)
Grind this to paste and add to the prepared mutton , let it cook for 5 for minutes
Ghee rice
4 cup jeera rice
2 cup chopped onions
9 cup boiling water
Ghee
Salt
Cinnamon
Cardamom
Cloves
If u like u can add mace and star anise
For garnish fried onions, cashews ,white kismiss, coriander leaves
Wash rice until you get clear water ( atleast 4 ,5 times)
Then soak rice for 30 minutes
Then strain the rice
Then in a bottom thick pan add ghee , then add chopped onions , saute until the onions are softened, then add strained rice , stir for 5 minutes and add boiling water , then add the spices and salt , cover the lid and cook rice on low flame ,
Once the rice is cooked ,off the flame and add more ghee
then garnish with fried onions , cashews , kismiss, and coriander leaves
Serve with hot mutton kurma enjoy
