What's good yall! Welcome back to my channel. Today, we're bread baking from scratch.
First things first, let's gather our ingredients. You'll need flour, water, yeast, salt, sugar, and olive oil. I prefer to measure out the ingredients by weight. I start with warm water in my mixing bowl and add active dry yeast and sugar. I give it a quick little mix and set it aside to bloom.
Let's move on to the flour. I'm using bread flour, but you can use any flour you have on hand. Add your salt to the flour and give it a quick little mix. Once the yeast has bloomed, it's time to mix everything together. Be sure to add your olive oil to your water first.

Now, let's get our hands in there!

I'M USING A STAND MIXER

Knead the dough for about 10 minutes. If it's too sticky, add a little more flour. If it's too dry, add a splash of water. The dough should be smooth and elastic. Kneading is a crucial step in bread-making. It helps to develop the gluten, which gives the bread its structure and texture.

Once you've kneaded the dough, it's time to let it rise. Cover the bowl with a damp towel (I prefer plastic wrap & towel) and let it sit in a warm place for about an hour.
After an hour, your dough should have doubled in size. Punch it down and divide the dough into two (three for xl pan) equal pieces. Shape each piece into a ball and cover the balls with a damp cloth, and let them rise again for about 30 minutes.

After your balls have proofed, flatten, and roll out (I'm trying to remove all the air bubbles) the dough. Fold over the left side of the dough to the middle. Repeat on the right. Now slightly fold the corners in and roll the dough til you reach the end and pinch closed. Place in a prepared pan. Repeat as needed. Cover the pan with a damp towel and rise again for about 30 minutes.

Preheat your oven to 320°F (160°C). Once it's heated, bake your bread for about 25- 30 minutes, or until it's golden brown and sounds hollow when tapped.

380g warm water
8g active dry yeast
34g raw cane sugar
60g olive oil (or sunflower oil)
680g bread flour (+ 14g if using a mixer)
14g salt

This batch size is for an xl 13" × 5" bread pan. Halve the ingredients for a regular 9" × 5" bread pan.
