I didn’t expect a cauliflower steak to taste this good… but this one is honestly next level.
Lightly crisp on the outside, tender inside, finished with glossy melted butter and served over a fresh lemon yogurt sauce — and it comes together surprisingly fast.

I used half a cauliflower, sliced into thick 2 cm steaks. I seasoned them with salt, pepper, smoked paprika, and lemon zest, then gave them a light sear in olive oil — just enough to help them hold their shape and not fall apart.
After that, I added a small splash of water, covered the pan, and let them cook gently for 5–7 minutes until tender.

Once they were cooked through, I added butter to the same pan and spooned that hot, glossy butter (mixed with the olive oil from the pan) all over the cauliflower. No garlic in the butter — just clean, rich, caramelized flavor.

I served it over a creamy garlic lemon yogurt sauce and finished with fresh rosemary. It’s simple, quick, and tastes so much more impressive than it looks.

• 1/2 head cauliflower (cut into 2 cm steaks)
