Welcome to another day in the life of my kitchen this week I'm making taco slow cooker pasta one-pot. Date and Walnut Loaf and Citrus Blueberry Loaf


Taco mix: 2 tbsp combined mix per 500g meat.

Ingredients
3 tablespoons chili powder

2 tablespoons cumin

1 tablespoon onion powder

2 teaspoons paprika

¾ teaspoon garlic powder

¾ teaspoon dried oregano

¼ teaspoon cayenne pepper



Citrus Blueberry Loaf: pre heat gas 4/350f
Cook 1 hour, and adjust to your oven.

1 cup (200g) granulated sugar
2 tbsp fresh lemon zest (about 2 lemons)
1 1/2 cups (195g) all purpose flour, plus 1 tbsp for blueberries
1 tsp baking powder
1/4 tsp salt
3/4 cup (185g) butter, room temp
1 tsp lemon extract
3 large eggs, room temp
2 tbsp fresh lemon juice (about 1 lemon)
1/4 cup (60g) milk, room temp

Date & walnut loaf: 1lb loaf tin

50g chopped walnuts
160g pitted dates, chopped
80g butter
1/2 pint water
14oz can condensed milk
8 oz Self-raising flour
1 tsp mixed spice
1 tsp cinnamon
3/4 tsp bicarbonate of soda
Pinch salt
50g caster sugar

Gas 4/350f - bake 1 hour
Leave to cool for 20 mins and then wrap in foil.
The pan ingredients need 3-5 mins stirring constantly, allow to cool 10 mins before adding to dry ingredients.
Beautiful sliced and generously buttered.
