The cuisine of China has influenced just about every corner of our world, but do you know what people in this part of the world actually eat every day for their staple meals?

Porridge here is a deliciously simple matter of cooking rice until it no longer can be defined as individual grains, and then seasoning it gently with salt, white pepper, and a basic bone (or occasionally vegetable stock) broth.

Rice noodles come in a few shapes and sizes, but are usually paired with a simple yet strong tasting soup like the 'Nam Tok' you see in this video.

**You can order a plain broth, however, only on occasion will this NOT contain meat, usually the difference is going to be on the amount of chilis and/or spices/herbs.

While Thailand does have its own styles, recipes, and fascinating micro-cultures when it comes to "Delicious Asian Food," it is the simple meals like porridge with pickled vegetables or rice noodles in beef bone broth that so obviously show the thousands of years of connection to the original recipes from China.

These meals are ones that people all over East and South-East Asia are eating every single day, and I love seeing how even in the year 2022 one can really feel connected to all that magnificent (and yet at its core so simple!) food history.

HOW TO ORDER THESE DISHES:
1. Porridge
In Thai, 'Jok' is the porridge, which in Chinese is "Zhou," and you can follow the more detailed descriptions of extra items to order as I've written throughout the video.

2. Noodles
In Thai, 'Kuay Teow' are noodles (which include many kinds), this specific kind Li is eating in Chinese are 'He Fen,' and in Thai are called 'Sen Lek' (thin rice noodles), and again you can learn more about the different soups, and more types of noodles, following the notes in the video.
